Since late April, Palestinian farmers have been harvesting green wheat, stacking it, and setting it on fire to flame roast. It is then sun dried and cracked for traditional Freekeh.

Freekeh is amazing with a smoky taste and chewy texture. It is a soup, side dish, main dish, everything but dessert! It is even better the second day.
