It’s Freekeh season in Palestine!

Green wheat plus flame roasting in the field = Freekeh

Since late April, Palestinian farmers have been harvesting green wheat, stacking it, and setting it on fire to flame roast. It is then sun dried and cracked for traditional Freekeh.

Freekeh soup - addictive!

Freekeh is amazing with a smoky taste and chewy texture. It is a soup, side dish, main dish, everything but dessert! It is even better the second day. Canaan fair trade farmers grow landrace (ancient native) wheat and their freekeh is hand made. You can taste it! All Freekeh and Maftoul from Canaan Palestine has been landrace wheat since 2019.
